Here is a wonderful celebration of our co founder St. Scholastica. This includes an organ Magnificat. I have never
heard the Dupre Organ Vespers in the context for which it was written, but the convention is that odd verses are sung in Gregorian chant and the even are done in an organ setting.
  The More familiar version is that the even are done in a faux bourdon or choral setting but this is a traditional alterate.
